Yesterday was so hectic I coudn't even concentrate on what I am doing. My mind was focussed on the telephone waiting a call from my husband. It's almost three months since we're having problems from our tenant not paying the rent. Our house is destroyed from their dog digging on our door. Dog pee all over the place. It is horrible! So much for the house we took care of. After the paper work has been done and everything on eviction procedure yesterday was the schedule for the court hearing. We don't have large amount of money to hire a lawyer so my husband represent himself in the court. I tell you what the whole procedure is nerve wrecking. Finally the phone ring. I dove into the telephone so excited to hear the news. "Hi baby we won!" Yey! I was ecstatic. Thank God He heard our prayers. Finally with all the problems that this tenant gave us judment had been served. The warrant of eviction for this lady will be next week. But what do we get from it? The money she owed us we don't know when she's gonna pay or maybe none at all. But how could this people do these bad things to us? I guess the world is full of bad people. Thanks for some people I knew that still have conscience and fear to the Lord to not commit this bad attitude.

squash cooked in coconut milk

Here is one of our Bicolano delicacy "a squash cooked in coconut milk". Just got lucky I had the necessary ingredients that we bought from the Asian store.
When I was a little girl my mom cooked this recipe and of all the vegetables that I do not like is this one. But we eat it anyhow because if we don't my mom will get angry with us besides we don't have any choice of food that was set on the table. I cried in front of the dining table every time we're gonna start eating. My sister was only a few years older than me. She was 7 and I am 5 that time. So to stop us from crying papa will scoop us both with his arm and we go in front of our house and look at the mountain close to us and papa started telling us stories about the enchanted fairies living on that mountain that when we eat this vegetables our eyes will become sharp and we will then clearly see the fairies.. Convinced by that, we eat this vegetables while papa was feeding us. But of course we saw something on that mountain alright, but only to realize when we were big enough to understand that those figures there were not fairies but group of people mountain climbing (lol!)
